Biryani is a dish that can be made in different variations, but chicken biryani is one of the most popular types. In this article, we will be discussing how to make chicken biryani at home, step by step.

How to make Chicken Biryani Recipe at Home

Ingredients:

  1. Chicken - 500 grams
  2. Basmati rice - 2 cups
  3. Onion - 2 medium-sized
  4. Tomato - 2 medium-sized
  5. Ginger - 1-inch piece
  6. Garlic - 4 cloves
  7. Green chili - 2
  8. Red chili powder - 1 teaspoon
  9. Turmeric powder - 1/2 teaspoon
  10. Coriander powder - 1 tablespoon
  11. Cumin powder - 1 teaspoon
  12. Garam masala powder - 1/2 teaspoon
  13. Bay leaves - 2
  14. Cinnamon stick - 1-inch piece
  15. Cloves - 3
  16. Cardamom pods - 3
  17. Salt - to taste
  18. Oil - 4 tablespoons
  19. Ghee - 2 tablespoons
  20. Water - 4 cups
  21. Saffron - a few strands (optional)
  22. Milk - 1/4 cup (optional)

Directions:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain the water and keep the rice aside.
  2. Cut the chicken into medium-sized pieces and marinate it with ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Keep the marinated chicken aside for 30 minutes.
  3. Peel and slice the onions thinly. Chop the tomatoes and slit the green chilies.
  4. Heat oil in a pan and add the bay leaves, cinnamon stick, cloves, and cardamom pods. Fry for a few seconds until fragrant.
  5. Add the sliced onions and fry until they turn golden brown. Add the chopped tomatoes and slit green chilies and fry for a few minutes until the tomatoes are cooked.
  6. Add the marinated chicken and fry for 5-7 minutes until the chicken is partially cooked.
  7. In a separate pot, boil 4 cups of water and add the soaked rice. Add salt and cook until the rice is partially cooked. Drain the water and keep the rice aside.
  8. In the same pan with the partially cooked chicken, spread a layer of the partially cooked rice over the chicken. Repeat the layering process until all the rice is used up. Sprinkle saffron strands over the top layer of rice and pour melted ghee over it. Cover the pan with a lid.
  9. Cook on low heat for 20-25 minutes until the rice is fully cooked and fluffy. If you want to give a restaurant-like texture, place the biryani pot on a hot tawa/griddle and cook for another 10 minutes on low heat. This process will create a ‘dum’ and enhance the aroma and flavor of the biryani.
  10. Once the biryani is fully cooked, switch off the heat and let it sit for 10 minutes. This will allow the flavors to blend well.
  11. Serve the chicken biryani hot with raita or salan.
